Modern Hungarian dining rooted in Tokaj’s 300-year-old vineyard map

Housed inside Generális Borhotel on Tokaj’s quiet baroque streets, 1737 Terrior takes its name from two things: the 1737 royal decree that first classified Tokaj’s vineyards, and the French terroir — that untranslatable sense of place you can taste. The restaurant lives up to both.

This isn’t a “hotel restaurant” in the afterthought sense. It’s a destination in its own right, with a dining room of warm woods, exposed stone, and candlelight that feels more like a winemaker’s private table than a public space. Service is unhurried and personal. You’re here to eat slowly, drink deliberately, and talk about the hill you just walked.

The Food
Chef’s approach is modern Hungarian with no gimmicks. The Zemplén landscape dictates the menu: Bodrog pike-perch with smoked paprika emulsion, mangalica pork aged in aszú lees, wild mushroom ragout from the forests above Erdőbénye, summer berries and walnuts from local orchards. Vegetables come from farms you can see from the terrace. Plates are restrained, seasonal, and built to carry wine, not compete with it.

Tasting menus run 4–6 courses, but à la carte is possible. Breakfast for hotel guests is served here too — think farmhouse cheeses, Zemplén honey, house-cured meats, sourdough, and eggs — with the option to start the day with a glass of dry Furmint. You should.

The Wine
The list is a love letter to Tokaj. Expect Furmint and Hárslevelű in every style: sharp volcanic dry whites, textured single-vineyard bottlings, late-harvest, Szamorodni, and aszú going back decades. The sommelier knows the growers, not just the labels, and will happily pour a flight that traces one hillside from base to peak. Glasses are generous, markups are fair, and there’s always something open by the glass you haven’t tried. Non-Tokaj Hungarian wines make cameos, but this is home turf, and it shows.

The Vibe
Intimate without being hushed. 1737 Terroir seats maybe 30, so it never feels chaotic. Locals book tables for anniversaries; winemakers bring out-of-town buyers; hotel guests wander down in robes and stay for three hours. In summer, doors open to a small courtyard. In winter, the stone walls hold the heat and the candlelight.

Tokaj has plenty of amazing csárdas and cellar plates; however, 1737 Terroir is where you go when you want the region interpreted, not just served. The kitchen respects tradition but isn’t bound by it. The wine program has depth without snobbery. And because it’s inside Generális Borhotel, you can end a long night of aszú without calling a taxi — just upstairs.

  • Reservations: Walk-ins welcome, but reservations are highly recommended and essential on weekends and during the entire September–October harvest.
  • Access: Open to the public, not just hotel guests.
  • Price: Tasting menu ~€45–€70. À la carte, mains €18–€30. Wines by the glass from €4.
  • Dress: Smart casual. You’ll see boots and jackets in harvest season.
